Best professional hair product for long curly hair?

Hi,

i have natural curly hair. it's really unruly curls though.. i want to have soft curls. and i want to have hydrated, soft, silky, shiney, and smell good hair. and my hair's really big, but i want it to go down. whats the best shampoo, conditioner, mouse/gel for my problem?
and what can i use for when i want to have straight hair?
